I think it is a first for me to have the Christmas cake baked and decorated before December. Last year I managed to make it and decorate it about a week before Christmas. I don't know why but making a sponge has always been something that I have been scared of. I think I was told years ago that they were tricky, only people with 'the touch' can make a good one. Perhaps this was something I talked myself into so I didn't have to make one?

I am not sure why I have waited so long to blog this meal? At the time I remember looking in the fridge to find not much in sight. The fish shop is closer than the butcher so that was pretty much how I started preparing dinner....with a quick dash down the street!
It must of been a Wednesday night because I was trying to get dinner organised before heading off to yoga. I have to say it.....it's HOT people! When the temperature climbs over 40 degrees (100 something) in Sydney, you know about it. I'd love to say I'm used to it and all is hunky dory but that would be lying. I HATE the heat. I go red, get itchy lumps on my feet, sweat more than any girl I know and am irritable all the time- a joy to be around I know.....I even annoy myself!
